    • Insert the chosen disc or nozzle into the bottom cap of the press.
    • Attach the bottom cap securely to the transparent cylinder.
    • Insert the screw mechanism with the handle into the top of the cylinder.

1. Preparing Passatelli

  1. Prepare your passatelli dough according to your recipe. The dough should be firm enough to hold its shape but pliable enough to be extruded.
  2. Select one of the two pressing discs designed for passatelli (refer to Figure 2).
  3. Fill the transparent cylinder of the press with the prepared dough. Do not overfill.
  4. Attach the bottom cap with the passatelli disc securely.
  5. Turn the handle clockwise to press the dough through the disc. The dough will emerge in strands.
  6. Use a knife to cut the passatelli to your desired length as they emerge, directly into boiling broth or onto a floured surface.

2. Preparing Churros and Porras

  1. Prepare your churro or porra dough. This dough is typically thicker than passatelli dough.
  2. Select one of the two pressing discs specifically for churros and porras (refer to Figure 2).
  3. Fill the transparent cylinder with the dough.
  4. Attach the bottom cap with the churro/porra disc.
  5. Turn the handle to extrude the dough directly into hot oil for frying, cutting to desired lengths as they emerge.

3. Preparing Potato Gnocchi and Doughnuts

  1. Prepare your potato gnocchi or doughnut dough.
  2. Select one of the two nozzles designed for gnocchi and doughnuts (refer to Figure 2).
  3. Fill the transparent cylinder with the dough.
  4. Attach the bottom cap with the gnocchi/doughnut nozzle.
  5. Turn the handle to extrude the dough onto a floured surface.
  6. For gnocchi, roll the extruded dough into logs and then cut into individual gnocchi pieces.

Proper cleaning and maintenance will ensure the longevity and hygienic use of your Tescoma Universal Dough Press.

  • Ukuqaqa: After each use, disassemble the dough press completely. Separate the cylinder, handle, screw mechanism, bottom cap, and the disc/nozzle used.
  • Ukugeza: All components are dishwasher safe. Alternatively, wash by hand using warm water and a mild dish soap. Use a brush to remove any dough residue from the discs, nozzles, and screw mechanism.

  • Ukomisa: Allow all parts to air dry completely before reassembling or storing. Ensure no moisture remains, especially in crevices, to prevent mold or mildew.

    • Ensure the components are assembled correctly and not cross-threaded.
